Chicken Piccata

This dish's serving size is for 2 people and makes for a great dinner any time of year!
What You'll Need:
- 2 Chicken Breast
- 1/2 cup of chick stock
- 1/3 cup of capers(rinsed well)
- 1/2 lemon juice squeezed
- 1/4 cup flour
- salt and pepper
- fresh parsley (garnish)
- tblsp butter
- 2 tblsp of olive oil
Steps

Heat oil and butter in skillet.

Season chicken with salt, pepper, and drench in flour.

Brown chicken on both sides (about 5 minutes each or until lightly brown).

After you brown the second side, add the lemon juice. Cook for around 1 minute.

Add chicken stock and cover pan after bringing it to a boil.

Rotate chicken after 15 minutes and then add capers.

Simmer on low until the sauce thickens.
Serves great over jasmin rice or mashed potatoes. Recommend asparagus or garlic butter green beans on the side.
